Gonna do a shrimp spanakopita for a potluck situation I'm involved with, but I'm not gonna call it that, probably tell them it's Skrimp Pockets.

Don't spank no pita's at work or you will be "me too" cancelled.
For that matter, I better rethink the Skrimp Pockets moniker too.

Grilled a couple of strips, sautéed mushrooms in garlic and onions simmered down for about 90 minutes in loads of butter to ladle onto the steaks. my Florida pod mates (mom and Bill) brought over spinach and homemade baked beans. tiny waves gently rushing up the sand across the street, little bit of yo-yo ma to accompany. Would it have been more fun to spend a couple of months on Kauai? For sure. But I know how much it means to moms

Had nicaraguan style fish with rice and beans ala winter bass.

we won't talk about that huge jack that took my surface iron to the rocks from the surface to 70 ft below. She must have been a big girl. :(

I know I hear you Bob, I had a recipe from my latino employee slow roaster too, but borrowed my neigbors insta pot and went that direction. 3# pork leg roast.
15 min set up.
30 min cook time.
15-30 min from shred to finish.
Super fast considering the slow roaster takes 6-10 hours.

Only live once!! give it a try!

Those were good. I want to make birria tacos. I had a birria burrito last week from Taqueria Revolucion and took it home and crisped it up in a pan and it was divine.

For dessert I'm making a pine nut cookie with Genepy instead of vanilla extract. The dough will be a basic chocolate chip dough recipe.

Birria has been the hot new pop up thing here in the last 9 months

Started marinating for this tonight. Gonna make tamales out of it.

This arrived a bit late from my step-mother in Fresno. These recipes are fuckin bomb. I grew up eating a lot of these and have been asking for a copy for years. I wish I had this back in March.

I never liked rice pilaf until the recipe in here. It's one of the best things ever. You can sub bulgur for rice, too. Trust me.

1 Need to buy some tomatoes and tortillas today
