Im also dealing with baking at high at altitude?
I ordered two pizza making books on Amazon that I need to get to. Ones about just neopolitical style pizzas and the other is about contest winning recipes if I recall.
If it's too thick, let it proof more or warm up before you toss it.
Being able to plan the dough making ahead of time has also been problematic
Least night's pie was very good.
Tommorrow nights pizza dough. Made the dough on Sunday, eat on Wednesday. LOL, the bags are pretty puffy with bacteria farts.

This, exactly. Fruit on pizza is a crime against humanity. Also illegal in several jurisdictions including mine.
So no tomato sauce for you then. OK. I think it's more the mixing of red sauce and pineapple. I do like a good "Hawaiian" pizza now and then though.
Fruit on a white pie (bianco) is pretty good. There was a place in Aptos, Pizza 101, that made pretty good pizzas. They did one with pears, and sausage from Corralitos Market. That was one helluva pizza. So good.
Fig and prosciutto on a white pie is pretty good too.
What's a true crime against humanity is chicken on a pizza. BBQ chicken pizza, fuckoff.
That's an interesting thought. I love all the ingredients, but never had chicken on pizza where I wanted it again. Would never say it was terrible, but it never quite works. I'd imagine someone can pull it off, but I haven't come across it.
frozen Digorno is the best pizzza, that's all there is to it
I don't love it but it's not bad. Frango com Catupiry is very common around here.
