why is there a surfboard shape mounted atop a foil?

what does the surfboard shape do (i understand that it's a platform to stand on) but why is wave riding via foil being limited via an association to the surfboard?

You must've missed the video of Kai Lenny riding what looked like 2 foot platforms, connected w a rod (similar to a snake board).

If you're talking about prone foiling, then you need to paddle into a wave fist, which lends itself to using a small shortboard planshape.
