I am sure this has existed for a long time in surfboard design. I am not too sure of the origin. I've noticed this coming into a handful of models fairly recently from popular shapers, so far the ones I can name off the top of my head:

Pzyel mid length crisis and crisis twin
Slater S Boss and Boss up
Panda Twinzer egg
Jim banks evolution
Surf Prescriptions has a handful of models using this bottom contour and it sounds like Doc has been doing for a while now
Maurice cole makes the reverse Vee line but not sure if they have double concave in the Vee

I picked up a 7' egg from DK a few months back. I ended up getting some really fun waves and had some great feelings but most of all I was surprised with the speed generation on being able to climb the face easy and confidently push off the toe side without the board feeling tracky or sticky on the face. Overall my stance felt much more neutral as opposed to being back footed on other boards, also the board does not feel tracky off the back foot even as a single with sidebites. Anyways, I got home and immediately took a look at the board closer and noticed the bottom contours and a pretty deep double concave V under the front foot. I am sure there are many other design features that could add to these feelings but for me this seemed like the biggest difference from boards I had in the past. To be clear this board does not have this concave all the way through but from the website description it sounds like the above listed boards do for the most part.

I really enjoy the feeling of the V under the front foot as this feels novel and felt really good for me on the wave. Anyways thats my two cents but curious of others experience on this style of bottom concave.

I just picked up a board from John Simon. It's a 6'9 squash tail twin plus trailer that has quite a bit double concave/spiral vee going on. Only had it out a few times is poor conditions but managed to catch a few ok waves on it. It surfed smaller than 6'9 and like you said felt much more neutral as opposed to being back footed. Also rolled very easy on rail. I think it'll be a winner if we ever get decent waves again. Something about vee bottoms I like fthat suits my style (or lack of). For example, I really clicked with my Huevo Ranchero. I absolutely love that design.

Pyzel ghost has a subtle one apparently.
A pretty significant percentage of my boards have double concave bottoms. When I worked for Jeff Bushman in the mid 90's he liked to use that contour in some of his step ups and his theories stayed with me. Ghosts, Padillacs, Astro, Astro Pop, White, Red and Power Tigers, Next Steps, Gremlins, WIld Cats... the list goes on and on, but they all have some form of double concave in them. It's a been a magical part of my shaping equation for a long time. Thank Bushy!!!

Pretty much all my boards (that I liked) for the last 30 years have been vee or vee double or both with channels..

the way they roll over and encourage you to really bury the rail is the best part of the vee component imo.

I just don’t get along with single cons in shortboards, they feel like the want to turn flat…like I see all the lightweight grommets do…just waving their hands around while the board window wipes the lip.
