White, lean, and firm: Alaska pollock, catfish, grouper, haddock, Pacific cod, Pacific halibut, Pacific rockfish, Pacific sand dab & sole, striped bass (wild and hybrid), swordfish


White, lean, and flaky: Atlantic croaker, black sea bass, branzino, flounder, rainbow smelt, red snapper, tilapia, rainbow trout, weakfish (sea trout), whiting

People don't like flaky.

Olive oil has a low smoking point smokin not so good for frying I think. Canola or grapeseed has higher smoking point for frying up da buggahs!

Firm fish, season the batter, double fry yur taters!

Back in the summer of 96' I went to the Toms River NJ Red Lobster and they were out of tartar sauce. It ruined the meal. They should have put a sign on the door, but they were sneaky instead and casually slipped that info in after you got drinks and biscuits. rolleyes

Oh no tartar on lobster. Nothing more is needed than a sprinkle of parmesan and a nice mist of Axe Body Spray.

I prefer the "Anything But Tree" event.
Having said that, contact Bird at his shop. He & Roper started the whole thing.
Aussies, Japs & Euros jumped on after about 3 of theirs.
Late to the party as usual. No self- respecting trend loving hip surfer would be caught dead at one of those things these days. So pass. But I hear they are still doing them in Portugal. Lame.
